The Culinary Arts and Restaurant students at John O’Connell High are not only learning how to cook, they’re engaged in a rigorous, in-depth course to prepare them in both theory and practice using the school's lab integration model. This fall, students studied marketing and American history to prepare for and understand the significance of Thanksgiving.  The holiday menu, served to school staff, features locally sourced classics with a Pacific Rim accent and relies more on direct flavors than fat. The menu includes pomegranate persimmon saladbraised turkey leg mole enchiladas, layered North Coast mushroom trio terrines, pumpkin cheesecake, and coconut cream brownies.
